Cranberry-Apricot Baked Brie

I had never really had brie before until last weekend. This was one of the most delicious things I have ever helped make! We had it for Cameron and Lis's engagement party and we all had so much fun making it!

Recipe adapted from Country Living.




Ingredients

1/3 cup chopped dried cranberries (crasins)
1/3 cup chopped dried apricots
1/4 cup sliced almonds
1/2 cup honey
1 and 1/2 teaspoon fresh chopped thyme
1/4 teaspoon salt
1/8 teaspoon freshly ground pepper
1 sheet frozen puff pastry thawed (we accidentally used phyllo pastry- still good though!)
1 wheel (8 oz) brie
1 egg white



Directions
  1. 1. Preheat oven to 400°F. Combine cranberries, apricots, almonds, honey, thyme, 1/8 teaspoon salt, and pepper in a medium bowl. Set aside.
  2. 2. Roll puff pastry to 12-inch square. Trim top rind off Brie and center cheese on pastry. Top with fruit mixture. (We had some issues cutting off the top rind)
  3. 3. Beat egg white and 1/8 teaspoon salt in a small bowl and brush some egg wash along pastry edges. Gather dough up around Brie, twisting into a topknot. Chill in freezer for 15 minutes.
  4. 5. Brush pastry lightly with egg wash and place on a parchment-lined baking pan. Bake for 35 minutes.

Serve with crackers.

The picture may not look SO appetizing, but I can promise you it was DELICIOUS!!!! Enjoy!!!
